RECIPES:

ORZO WITH SAUSAGE, SPINACH AND CORN – Found this tasty recipe online at skinny taste. They use chicken sausage, but I went with pork. In a pot, cook your sausage, I like hot sausage, and break it up while cooking. Add some oil, and chopped onions, and frozen corn and cook until onions are soft. Add in some orzo and chicken broth and bring to a boil and then turn it down and simmer for 10 minutes or until orzo is cooked, add in fresh chopped spinach and cook until wilted. Top with fresh grated parm cheese and pepper.

Camping Season:

STEAK FAJITA QUESIDILLAS (BLACKSTONE COOKING) – You could do this on a skillet in the house too but if you are camping and have a Blackstone, this is for you! Cut skirt steak into small pieces and season with taco seasoning and cook until brown. On the other side of the grill, I cook chopped red, green peppers and onions until soft, combine it all together and then add on some salsa and move to the side. Put a fluor tortilla down on the griddle, add some shredded Mexican cheese, add your steak mixture, more cheese and top with another flour tortilla and grill on both sides until golden and melted cheese inside, slice into pieces. Serve with sour cream!
