RECIPES:

CHOPPED SALAD – My sister made this over the weekend and it was so yummy! Chop up everything you would put in an Italian sandwich: Capicola Ham, pepperoni, genoa salami, mortadella, prosciutto, hot ham, provolone, mini mozzarella balls, pepperoncini peppers, thinly sliced red onion, chopped plum tomatoes, shredded romaine lettuce, roasted red peppers, season with Italian seasoning, crushed red pepper and black olives. For your dressing: olive oil, red wine vinegar, minced clove, Dijon mustard, lemon juice, dried oregano, salt, pepper mix together and mix with you chopped salad. Serve with crackers or sliced Italian bread.

Camping Season:

MEXICAN STREET CORN FLATBREAD - I haven’t tried this one yet, but plan on making these on the Blackstone while camping Father’s Day weekend. I have a pizza oven to go on our Blackstone so that is my plan. Get your pizza dough to room temperature and split in 2 balls and roll out in flour into rectangles on to pizza stone or cookie sheet. In a bowl, mix sour cream, Mayonnaise, minced garlic, lime juice, chili powder, salt and spread on to your two doughs. Top each flatbread with corn , shredded mozzarella cheese, crumbled cotija cheese and more chili powder. Bake until golden brown and bubbly then top with fresh cilantro, more cotija cheese, more drizzle of sauce and lime juice and cut into strips and serve.
