RECIPES:

PULLED SWEET AND SPICY BBQ CHICKEN TAQUITOS – I cooked chicken breast seasoned with salt, pepper, paprika, onion and garlic powder, shred the meat and set aside. For my BBQ sauce: mince onion and cook in some oil until soft, add minced garlic and heat and then add ketchup, brown sugar, vinegar, soy sauce, hot pepper sauce, Worcestershire sauce, chili powder, liquid smoke if you like the smokey flavor. Heat on low for 30 minutes and then add in your shredded chicken.In a bowl mix soft cream cheese, shredded cheddar cheese, chopped scallions, fresh cilantro and hot salsa of your choice. Take a corn/flour tortilla and heat in the microwave until soft and pliable. Put a layer of your cheese mixture and a layer of the chicken and roll tight. Spray the taquitos with spray and bake at 415 for 20 minutes, flipping halfway through to get golden on each side. Serve with salsa and sour cream.

CROCK POT RIBS – St. Louis ribs were on sale at Shaw’s so a budget Super Bowl snack!Take your ribs out of the fridge to get to room temp and prepare by taking off the silver lining stuff on the back.Peel it all off and dry off the meat with a paper towel and slice your ribs into small enough chunks to fit in your crock pot. and then season with salt, pepper, paprika, onion and garlic powder, chili powder make sure you are getting all sides. Then put in your crock pot with homemade BBQ sauce or your favorite store-bought sauce.Cook on low for 6-8 hours. The meat will fall right off the bone!
