SUNDAY COOKING: No Patriots, but we still love to eat!

STUFFED MINI PEPPERS – I bought mini peppers and sliced length wise and took the seeds out, sprayed with some pam and then baked for 5 minutes at 350 and remove from the oven. I did two stuffings: a pizza stuffing and a sausage stuffing. For the pizza, I mixed mini pepperonis with soft cream cheese, fresh chopped basil, garlic powder, Italian shredded cheese, and some pasta sauce. For the sausage stuffing: cook Jimmy Dean hot sausage roll and then mix in soft cream cheese, crushed red pepper, fresh chopped parsley, and Colby jack cheese. Fill your mini peppers with the stuffing and cook in the oven for another 5 minutes.

AND STUFFED BISCUITS – I had some leftover stuffing from the mini peppers and had some biscuits to use . . .take your grand biscuits and peel in half. In a muffin tin spray or grease and then put in half of your biscuit in tin, bringing up the side and leaving a spot in the center. For the pepperoni ones, I put a normal pepperoni at the bottom and then topped with my “pizza” stuffing and then, cut provolone cheese into four pieces, put a quarter slice on top of each one and baked until golden and served with marinara sauce. For the sausage stuffed ones, I put sausage mixture and topped with a Colby jack cheese, bake until golden and serve with salsa and sour cream.
