FOOTBALL SUNDAY COOKING:

MOROCCOCAN EMPANADAS – In a frying pan cook chopped onions and chopped carrots in oil until soft, add garlic and ground beef, chopped scallions, salt, pepper, crushed red pepper, cumin, and coriander and when all cooked, drain fat and add in a jar of apricot preserves and more red pepper for a little bit of heat. Fill empanada discs, seal and brush on an egg wash and then bake for 20 minutes and serve with sweet chili sauce.

CHICKEN TORTILLA SOUP - In a large pot, cook chopped onion and chopped red peppers until soft, add in a can of fire roasted tomatoes, chicken broth, can of chopped green chiles, hot enchilada sauce, chopped jalapenos, corn, rinsed and drained black beans, and season with chili powder, cayenne, garlic and onion powder, salt, pepper, cumin, paprika. While that is simmering, you can shred a rotisserie chicken or cook your own and shred and add to your soup. Season with fresh chopped cilantro and more spice if you need it.Serve with fresh slice lime, shredded cheese, chopped avocado, sour cream, tortilla strips.
