FOOTBALL SUNDAY COOKING:

BAKED POTATO BAR – This is easy for a crowd once you get all your sides prepared.I did chili, steamed broccoli mixed with Velveeta, cooked chopped ham steak, chopped bacon, chopped pepperoni, cooked ground beef with cream style corn. Take russet potatoes and coat in butter and sprinkle with salt and bake on a rack that is on a cookie sheet for about 30 minutes and then coat with more butter and bake for another 30 minutes or until you can easily poke through the center. Once out of the oven set up your bar! Italian: pepperoni, marinara, mozzarella cheese, Chili and cheddar, sour cream, Broccoli with cheddar, other toppings: butter, sour cream, ham, bacon, scallions, you can do a Mexican with queso. My favorite was the Shepards pie baked potato!

AU GRATIN POTATO BITES – Slice yellow potatoes thin and cut them to fit in a muffin tin. In a pot, cook butter and garlic, then add in heavy cream, cream cheese and grated parm cheese and season with pepper. Spray your muffin tin, put layers of potatoes about halfway up and then spoon on some of your sauce, more potatoes, more sauce and then top with a slice of gruyere cheese. Bake at 350 for 35 minutes or you can slice through the potatoes easily and once cool, pop out of tin and sprinkle with thyme.
