IDEAS FOR COOKING –

TOMATO PIE – Peel tomatoes and cut into thick slices and season with salt and pepper and dry out. Cook bacon, chop and set aside. Caramelize slices of vidalia onions. You can use store made pie crust or make your own. Sprinkle a layer of cheese on the bottom of pie crust and par bake so it doesn’t get soggy. Layer the pie crust with your tomato slices, onions, bacon, chopped basil, oregano, garlic powder, crushed red pepper. In a bowl mix shredded cheddar cheese and some mayonnaise and add on top and then cover with tin foil and bake at 375 for 30 minutes. Remove the foil and and cook for 30 more minutes.

WEEK 6 OF UNIQUE TACOS:

HOT HONEY SHRIMP TACOS – Season the shrimp with olive oil, paprika, cumin, onion and garlic powder and salt and pepper and then start cooking then coat in hot honey and red pepper flakes and set aside. For your cilantro slaw, in a bowl mix shredded cabbage, thinly sliced red onion, chopped jalapeno, chopped cilantro and squeeze lime juice, olive oil, salt and pepper and honey. For your sauce, mix ranch dressing and sriracha together. I like these on flour tortillas but you can use hard shell too. Layer shrimp, slaw and add your sauce and serve with limes and more cilantro.
