IDEAS FOR COOKING –

STEAK BOWLS – Cook rice noodles according to the package, drain and set aside when done. In a bowl combine lime juice, olive oil, fish sauce, chili sauce and some brown sugar. Cut a skirt steak into pieces and rub with olive oil, salt and pepper and cook on each side and then set aside. Put your rice noodles in a bowl, and then top with carrot shreds, cucumber slices, thinly sliced radish, cilantro and then mix in your lime dressing top with your steak.

WEEK 5 OF UNIQUE TACOS:

VEGGIE FAJITA TACOS – I love fajitas so why not turn them into a taco! For your green sauce to top it off: in a food processor mix: garlic cloves, a serrano pepper (use seeds if you like spice), cilantro, parsley, ripe avocados, salt, lime juice, maple syrp and olive oil and a little water to loosen up. Once mixed together set aside. Cut red and green peppers into strips, along with Vidalia onions, summer squash, zucchini and cook in olive oil with salt, pepper, lime juice, oregano, red pepper flakes. Cook until tender but not soft. Put your veggies in a warmed half flour half corn tortilla and top with green sauce.
