IDEAS FOR COOKING –

BUFFALO CHICKEN BAKED STUFFED POTATOES – For my baked potatoes, wash russet potatoes, poke holes with a fork, and coat with olive oil and salt and pepper, bake for an hour or so at 420 or until soft. Take them out to cool. I cooked chicken breasts, the day before, and then shredded the meat. For your buffalo chicken, in a saucepan melt cream cheese and mix with Frank’s Red Hot, garlic powder, ranch dressing until all combined (add as much frank’s as you like for spice) and then add in some grated mozzarella cheese. Add in your shredded chicken and then put in a casserole dish, sprinkle on shredded orange cheddar and crumbled blue cheese and bake for 20 minutes. While your dip is cooking, cut off the tops (the long way) of your potatoes and scoop out the inside of the potatoes and mash with butter, salt and pepper and then mix with your buffalo chicken dip, and then put back in the potato peels and top with more shredded cheese and bake for 15 minutes. Top with chopped scallions and serve with sour cream.

CHICKEN ENCHILADA TORTILLA SOUP – In a soup pot put chicken broth, a large can of hot enchilada sauce and a large can of mild enchilada sauce, black beans, drained and rinsed, corn, a can of diced Mexican tomatoes, cooked shredded chicken, thinly sliced jalapenos, fresh chopped cilantro (if you don’t think it tastes like soap), season with salt and pepper, cayenne peppers, garlic powder, onion powder. If you need to make it thicker add cornstarch to chicken broth and add to your pot. Cook until all heated, and jalapenos softened. Serve with sliced avocados, southwest tortilla strips, sour cream, lime slices, fresh cilantro.
