IDEAS FOR COOKING – GRANITE CHEF 2022 RECIPES

I did a Greek theme for Granite Chef this year . . .Laura, my sous chef, and I came in second place, but we both enjoyed the food!Congrats to Taylor, and Kelly I suppose, on their first-place win!

LEMON POTATOES – We did these on the grill as it was a grilling competition, but I usually make them in the oven. In a bowl, mix, lemon juice, chicken stock, oregano, lemon pepper, salt, chunks of chopped garlic and olive oil. Chop Yukon potatoes into wedges and put in a roasting pan and then top with your sauce and then grate some lemon zest on top. Tightly seal your roasting pan with tinfoil and bake at 400 for about 20-30 minutes and then open and check to see softness and liquid amount, if not soft add in some more chicken stock and tightly seal again. You want to make sure you continue to cook in the juices until soft. Once soft I transferred to a buttered skillet and browned on each side. Sprinkle on some more lemon pepper, some oregano, lemon zest and parsley.

GREEK COUSCOUS SALAD – Cook your pearled couscous in chicken stock and then transfer to the fridge to cool. While that is cooling make your vinaigrette by combining red wine vinegar, lemon juice, garlic juice, oregano, Dijon mustard, salt, pepper and olive oil. When your couscous is cold added in chopped cucumbers, halved cherub tomatoes, kalamata olives, crumbled feta cheese, roasted red peppers, pepperoncini and some thinly sliced red onion.

TURKEY GYROS – I know the real gyro has lamb, but this is still so good! Combine chopped fresh spinach, ground turkey, garlic powder, salt, pepper, oregano, chopped scallions and then form into a patty that will fit your naan bread (you can make big gyros or minis so that will change your patty size). Grill the turkey patties until cooked through – you don’t need a long time. They cook quick.For your Tzatziki sauce: Whole plain Greek yogurt, fresh dill chopped, grated cucumber that has been strained of as much water as you can, garlic powder, salt, and lemon juice. Refrigerate.  For your naan bread grill on both sides until warm and pliable, then put down slices of cucumber, slice of tomato, thinly sliced red onion, turkey patty and then top with tzatziki sauce, fresh dill and serve with a wedge of lemon.
