IDEAS FOR COOKING WEEK –
MEDITERANNEAN BURGERS
In a skillet heat olive oil and cook minced vidalia onions until soft and then add minced garlic and then set aside. In a large bowl mix lean ground turkey, the onion and garlic, some breadcrumbs, fresh chopped dill, fresh squeezed lemon juice, cumin, salt and pepper, and combine but don’t over work. Then roll into balls and put in the fridge for a bit to cool. You can leave them wrapped for 24 hours, but you could also just give them 20 minutes or so in the fridge to get firm. While they are cooling, you can make homemade Tzatziki sauce: whole Greek yogurt, minced garlic, fresh lemon juice, fresh chopped dill, grated cucumber (that is squeezed of excess water), salt and pepper and mix and refrigerate. Form your patties once done and cook in cast iron pan or on the griddle and serve on a bun, with lettuce, tomato, slice of red onion and tzatziki sauce.
SWEET AND SOUR MEATBALLS OVER RICE
In a large bowl mix ground beef, Worcestershire sauce, garlic powder, chopped scallions, soy sauce, bread crumbs and egg and mix well and let marinade in 20 minutes. Make your meat mixture in a round meatball size ball and cook on parchment lined cookie sheet, spray with cooking oil and bake them for 15-20 minutes until cooked through. While they are cooking in a skillet, largely chopped bell peppers (all colors), large, chopped onions, a can of chunk pineapple or fresh chopped pineapple and cook for a few minutes until soft but not mushy. Once your meatballs are cooked add to your sauce and serve over brown or white rice.
