IDEAS FOR COOKING WEEK –

HAM AND CHEESE STUFFED CHICKEN

Leftover Easter ham so let’s use it! Pound out your boneless chicken thighs and season with salt and pepper. Spread some Dijon mustard, a slice of your ham, and then a piece of gruyere cheese on your chicken and then roll up, and use a toothpick to secure and bake for 25-30 minutes at 350 or until cooked through, then top with fried onion crunchies and broil until golden for a few minutes.Serve with some mashed potatoes and green beans.

PEA SOUP

More ham, now for some soup! Start with some butter in a pot and add in your chopped carrots, celery and onions, seasoned with salt and pepper and cook until soft and then add in some minced garlic and split peas (that have been rinsed). I use both yellow and green but you can pick whatever you like. Add in your leftover ham bone, thyme, a bay leaf, chicken stock and water and bring to a boil. Then you want it to simmer on low for an hour and a half stirring every once in a while. Once you get it to the consistency you want and peas have been softened add in some diced leftover ham and remove the bay leaf and bone. If you want a smooth pea soup you can use an immersion blender before adding in your ham slices when you remove the bone and smooth it out, but I like it chunky. Serve with some toasted French bread croutons.
