IDEAS FOR COOKING THIS WEEK – SUPERBOWL SUNDAY!
CRAB CAKES -
In a bowl mix mayo, a beaten egg, Dijon mustard, Worcestershire and hot sauce, salt, and pepper. In a bowl mix lump crabmeat (you can use fresh, but I usually just buy the canned stuff in the seafood department), with some panko breadcrumbs, and fresh chopped parsley. Add in your mayo mixture and form into patties and fry in a hot oil skillet and cook until golden brown on each side. Serve with lemon and tarter sauce.
TATER TOT JALAPENO POPPERS
I saw a recipe on Delish and had to make with my own spin. Slice your jalapenos length wise and deseed. In a bowl mix softened cream cheese, shredded cheddar cheese, salt, pepper, onion and garlic powder, some hot sauce and honey. Put cream cheese mixture in the jalapenos, put 2 frozen tater tots on top of the cream cheese, then wrap a piece of bacon around the tots and jalapeno.Do with all of them and bake on a wired rack on top of a parchment lined baking sheet and bake 20 minutes at 350. If you need crispier bacon, then broil for the last couple minutes.
DIPS FOR ALL! A lot of snacking on Superbowl Sunday! Here are some dips I will be serving with crackers, chips, veggies, and biscuits.
BUFFALO CHICKEN DIP
Cook up some chicken breasts seasoned with salt and pepper or buy a rotisserie chicken and shred that up. Melt some butter in a skillet and add in minced garlic and your shredded chicken, and coat chicken in it. Put your heat on low and add in cream cheese and stir in sour cream, hot sauce and top with shredded cheddar and pepper jack cheeses. Cook in the over at 375 for amount 10 minutes or until it gets hot and bubbly. You can sprinkle with blue cheese crumbles and scallions.
PIZZA DIP
In a bowl mix shredded mozzarella cheese with softened cream cheese, garlic and onion powder, Italian seasoning, crushed red pepper, ricotta cheese. (If you want a meat lovers dip you can cook up some sweet or hot Italian sausage with no casings and crumble). Put your cheese in a small casserole dish, top with your sausage crumbles if you are adding them, if not spread some pizza sauce on top, then a layer of parmesan cheese, more shredded mozzarella, top with pepperonis and bake about 20 minutes at 375.
SPINACH ARTICHOKE DIP
In a bowl mix cream cheese, mayo, parmesan cheese, Romano cheese, minced garlic, chopped basil, garlic powder, salt, and pepper, chopped fresh spinach (or frozen chopped spinach that has been thawed and drained), chopped artichoke hearts and then put in a small casserole dish, top with mozzarella cheese, and bake for 25 minutes until bubbly.
REUBEN DIP
In a bowl mix chopped deli corned beef, sauerkraut, shredded Swiss cheese, cream cheese, sour cream and thousand island dressing. Put in a small baking dish and bake for 20 minutes or until hot and bubbly!
