IDEAS FOR COOKING THIS WEEK –

CHEESY APPLE CHICKEN BREASTS – It's time to start thinking fall flavors! Butterfly your chicken breasts and season with salt and pepper all over. Cut a red apple of your choice into thin slices and then put a layer of apple, layer of sharp white cheddar cheese, repeat until chicken is stuffed and drizzle them all with olive oil. Cut sweet potatoes into wedges, in a bowl mix oil, paprika, salt and pepper and coat all your potatoes and then add in a thinly sliced red onion. Place the veggies on the bottom of a casserole dish and top with your chicken. Bake at 400 for 30 minutes.

BUFFALO CHICKEN CHEESE BOATS – For this recipe you can shred a rotisserie chicken up or cook your own chicken and shred. In a bowl, mix melted butter, franks hot sauce, vinegar, salt and chopped scallions and pour over your shredded chicken and mix well. Now for the dough - you can make your own, buy dough balls from the deli or you could even buy the pillsbury dough already made and just cut it. Any way you choose, put your dough in to smaller ovals (imagine these as individual serving boats) and then put shredded mozzarella cheese along the edges and fold them over using water to seal the dough and creating the stuffed crust. Fill the boat with your chicken mixture and then coat the crust with olive oil and top all the chicken with more shredded cheese and then bake for 12-15 minutes at 400 or until dough is golden brown. Top with more chopped scallions. Serve with ranch or blue cheese.

CORN DIP – Just in time for the corn season and a football game! Make some corn on the cob or use at least 3 cans of corn and take the kernels off and then mix with chopped red and green bell peppers, a can of chopped green chiles, minced jalapenos peppers, minced scallions, equal parts mayonnaise and sour cream, black pepper, garlic powder, shredded sharp cheddar cheese! Mix it all together and serve with Fritos Scoops.
