If you haven’t noticed the prices of everything going up good for you! I have because I am always searching for deals!Deals of old are definitely not happening right now so everything is priced high, even when they say it’s a sale. My recommendation is to stock up when you see a good price on steak or chicken and freeze it if you have the room. A few years back we bought a stand up freezer for less than $500.I stock it with meat throughout the year and it definitely came in handy during the covid “no shopping, stay at home” months!Anyways a special treat for you . . .here are some deals on freezers. IDEAS FOR COOKING THIS WEEK –
HAM AND CHEDDAR TRIANGLES – I made this appetizer the other day and it was a hit and so easy!Buy some puff pastry and put on a greased cookie sheet, layer on some apple butter, then a layer of black forest sliced ham (be as generous as you want with the slices and cover the pastry and then top with slices of sharp cheddar cheese to cover the entire layer of apple butter and ham, put on your second puff pastry sheet, brush on some melted butter and bake at 400 for 15-20 minutes or until the pastry is cooked.Cut into triangles and serve!
MUSHROOM BISQUE– I know it’s still summer but I love a good soup!I was craving a mushroom soup on Sunday so this is what I whipped up!In a sauce pan I cooked sliced shallots in butter, when soft I added garlic and then chopped mushrooms.I used baby bella, maitake and shitake . . . you can use whatever you like but these are great flavored for the soup.Once all soft I put in a soup pot, with chicken stock, 2 cups of water and 2 teaspoons of Better than Bouillon mushroom flavor, deglaze your pan with some marsala and sherry and then add to your soup pot, add heavy cream, pepper to taste and fresh thyme, then I used the immersion blender to smooth it into a bisque. I served with toasted French bread that I buttered.
GREEK CHICKEN KABOBS – We are still getting some hot humid weather so somedays you want to eat something cool and refreshing.When you have tzatziki sauce that’s how I feel, refreshed!For your marinade for your chicken: mix olive oil, lemon zest and lemon juice, paprika, dried oregano, basil and thyme, minced garlic and shallot and salt and pepper and coat your chicken thighs that have been cut into cubed kabob size.You can marinate this for up to a day before but I recommend at least a few hours.Put your chicken on skewers and season with more salt and pepper, grill them up and serve with sliced cucumbers, grape tomatoes, Kalamata olives, chunks of feta cheese, wedges of lemon and homemade tzatziki sauce: combination of whole milk green plain yogurt, dill, grated cumber, lemon juice, salt, onion and garlic powder and olive oil.
