IDEAS FOR COOKING THIS WEEK –

SOUTHWEST GRILLED SWEET POTATO SALAD

In a large bowl, put peeled and chopped sweet potatoes, olive oil, salt and pepper and then grill (on Blackstone or regular grill) until they are soft but not mushy.Pt on the grill your shucked corn on the cob and start to char on each side and keep rotating until all sides are done.Let your sweet potatoes and corn cool and then cut your corn off of the cob and put in bowl with your sweet potatoes and stir in a can of rinsed and drained black beans, a diced red pepper, chopped scallions and chopped cilantro and some chopped avocado.Squeeze fresh lime juice all over it and mix and then season with salt and pepper. (You could also top with some grilled chicken.)

COD FOIL WRAPS

In your foil this week you can put in your filets of cod, thinly sliced summer squash and zucchini, drained and rinsed capers, olive oil, salt, pepper and thyme. Top with halved grape tomatoes and seal up your tinfoil and cook on the grill and cook for 15-20 minutes, remove and add some fresh squeezed lemon juice.

PINEAPPLE CHICKEN

Pound out your chicken breast and season with salt and pepper. In a skillet, heat oil and cook your chicken on each side and then season with a combination of Italian seasoning, paprika, garlic and onion powder, salt and pepper.On top of your chicken sprinkle shredded mozzarella cheese, grated parmesan cheese and then add a slice of ham and a slice of pineapple (you can omit ham if you don’t like) and then add on more cheese mix of mozzarella and parmesan and then bake at 375 for about 10 minutes or until chicken is cooked through.

RAVIOLI LASAGNA

I would have never of thought of this, but once I tried it! Mind blown!Cook your ground beef and ground Italian sausage with chopped onion and season with salt and pepper. Once cooked through, drain and add in minced garlic and marinara sauce.In a bowl mix some ricotta cheese, an egg, grated parmesan cheese, chopped fresh basil, Italian seasoning and mix.Spread a layer of your meat sauce on the bottom of a casserole dish, top with a layer of fresh cheese raviolis, another layer of meat sauce, layer of ricotta mixture, layer of shredded mozzarella cheese, grated parm cheese, another layer of raviolis, meat sauce, ricotta, mozzarella and then cover loosely with foil and bake for 30 minutes at 350 and remove foil and cook for about 15 more minutes and top with more chopped basil.

COLORADO’S SANDWICH: FOOL’S GOLD

Well this one might be more of a dessert sandwich but it looked really good when I went through the list of sandwiches!This sandwich was introduced to Elvis by a man named Nick and they became friends. Cook your bacon nice and crispy, place on paper towel and set aside. Hollow out the bottom of a sliced French bread, and smear with butter on all sides and bake at 375 for 10 minutes. Once the bread starts to cool a bit, put a layer of peanut butter (I am a Skippy girl and love chunky but traditional is creamy) in the bottom hollowed out part, top with your crunchy bacon and then put your jam of your choice on the top piece of bread, close it up and enjoy!
