RECIPES FOR THE WEEK
TURKEY PATTY GYROS – Mix turkey burger, chopped fresh spinach, minced garlic, with egg white, chopped scallions and dill, season with cumin, coriander, salt and pepper and cook the small patties under your broiler or on the grill.Once cooked squeeze some lemon juice on them and set aside.In a bowl mix plain Greek yogurt, grated cucumber, lemon juice, dill, garlic powder and salt and mix.On a warm flat bread, put the yogurt sauce, mini turkey patties, and top with sliced red onion, cucumbers and tomato.Enjoy!
FISH CAKES – Cook your haddock on a baking sheet in olive oil and set aside when done. Cook a couple of russet potatoes (peeled, chopped) in boiling water. Once soft, mash, add salt and pepper, add some tartar sauce (you only need a couple tablespoons and save the rest for dipping (make your own or purchase. My recipe: mayo, horseradish, spicy relish, parsley, scallions, lemon juice, sugar and some hot sauce) add some lemon zest, parsley, scallions and cayenne pepper to your potatoes, mix and then add your fish, combine and then make cakes. Dip in a beaten egg wash and cover in panko crumbs and fry up.Dip in the leftover tartar sauce!Serve with some veggies!Asparagus and Brussel sprouts great price at Aldi.
Filet Mignon with spinach mac and cheese – Treat the mom in your life to some filets on her special day.Just cook with salt and pepper on a really hot skillet to make a great hard sear! (Keep your meat out to get to room temp to make it a perfect cook.)For your spinach mac and cheese I pick Cavatappi pasta but you can pick whatever pasta you want.In a pot I heat up the butter and add some flour to make your roux.Add in milk and until creamy and then you can add in some cream cheese, white cheddar cheese, gruyere cheese, hot pepper jack (I switch up my cheeses all the time because you can get cheese ends for cheap at Market Basket in the deli section – so use your favorite).Once your cheese mix is smooth, add some fresh spinach that has been chopped up and add salt and pepper, garlic powder, onion powder and I like to put some nutmeg in my sauce to add something more. Once it’s cooked pour on your al dente pasta, put in casserole dish and bake for 30 minutes . . . I like to add more cheese on top to give it a crusty top.So good!Serve with some garlic bread.
CHEESEBURGER CASSEROLE – Cook your ground beef and onion and season with salt, pepper, garlic powder and if you like some spice, add some crushed red pepper.Drain fat and set aside. Slice your russet potatoes thin and then put a layer on a casserole sheet and season (I used Spud Fixin’ by Camp Mix) but you can make your own seasoning. Add a layer of ground beef, layer of cheddar cheese, and repeat. In a bowl mix condensed cheddar, beef broth, evaporated milk, salt, pepper, whisk and make smooth then pour on top of layers.Cook for an hour with aluminum foil on top.Take it off after the hour and cook for 15 more minutes or so the potatoes and cheese get golden brown. PANINI NIGHT – I get a variety of cheese and meats and make Paninis to order.I do have a Panini press which helps make the perfect grilled sandwich but you can also press on a grill or griddle. You can always choose by the deli sales at each store. Here are some examples for sandwiches:
·Pesto chicken, with provolone, mozzarella, plum tomatoes and roasted red peppers.
·Cuban on sourdough (Ham, Dijon mustard, pickle, swiss, honey and mayo)
·Chicken Parmesan
·Roast Beef (caramelized onions, boursin cheese)
·Warm Italian (ham, prosciutto, salami, capicola, roasted red peppers, fontina cheese)
·Sausage-Feta – Spread olive tapenade on the roll, spicy sausage, roasted red peppers and feta.
·Veggie - fill with your favs and your fav cheese (cooked peppers, broccoli, mushrooms, artichoke hearts).
·Green Apple, Cheddar, Chicken (use apple butter as a spread)
·Peanut butter and banana (Kids love dessert sandwiches!)
