RECIPES:

SMASHED DUMPLINGS – I made these over the weekend and so good! I love making dumplings, but they are a pain in the butt! This makes them so much easier. In a bowl, mix soy sauce, ground pork, fresh grated ginger, sesame oil, fresh grated cabbage, thinly chopped scallions and then in a round dumpling wrap brush with egg wash and then spoon and flatten out the pork mixture on the wrap to the edge and fry pork side down in sesame oil until pork is cooked and then flip over and cook the other side. Once done, serve with fresh chopped scallions, and I did three dips: hoisin sauce, soy sauce and an Asian chili sauce.

CRAB RANGOON DIP – So much easier than making crab rangoons. Soften cream cheese, mix a can of white crab meat, soy sauce, Worcestershire sauce, sugar, garlic and onion powder, chopped scallions and shredded mozzarella cheese and then bake for 25 minutes at 350 until hot and bubbly. I served it with salted rice crackers, but you can also serve with fried wonton chips.
