FOOTBALL SUNDAY COOKING:

BEEF WELLINGTON APPETIZERS – These are a little expensive, but so worth it. If you don’t have a crowd or get a sale on a tenderloin this is amazing.Take your tenderloin out and season with salt and pepper and cut into bite size chunks and let sit out to get to room temperature and then cook in an oiled skillet on each side. Cook to a very rare, and just sear on each side, as the steak will bake. In a pan, cook chopped Bella mushrooms and chopped Vidalia onions until soft, add in minced garlic, chopped pitted kalamata olives, Worcestershire sauce, stone ground mustard and Shallot and Chive Boursin cheese and combine. Roll out a puff pastry sheet, put a bit of your mushroom cheese sauce down on a piece of it, cut a slice of prosciutto to wrap around your bite size steak, put on top of your sauce, cut your puff pastry into a square to fit around your steak and seal on all together by pinching all ends. Put parchment paper on a cookie sheet and put your wellington seal down on the paper. Continue to do this with all your steak bites, cutting each square of your puff pastry to fit around. Mix an egg and brush on each bite and then bake at 400 for about 15 minutes or until golden. You can serve with a creamy horseradish sauce: mayo or sour cream, Worcestershire, salt, pepper, horseradish, garlic and minced chives.

PARKER’S APPLE FRITTERS – I don’t like baking because I don’t like measuring, but these are great to eat, and I help with the frying part. In a bowl stir, flour, baking powder, salt together and then add milk and eggs and oil and combine it all together and then add in chopped, pealed apples. We used cortlands and johnny macks and we also added walnuts to some batches. In a deep fryer or in a pan with oil on the stove top, put a spoon full of your batter and cook on each side until golden brown on each side. Remove from pan with slotted spoon and roll in a mix of cinnamon sugar and then add on some powdered sugar before serving or serve with vanilla ice cream.
