Football Season:
TACO MEATBALL SOUP – For the meatballs: ground beef mixed with taco seasoning (if you make your own: chili powder, paprika, cayenne pepper, salt, onion and garlic powder) or a store bought mix, eggs, crumbled tortilla chips and combine. Bake until cooked through. For your soup, in a large pot, cook chopped yellow onions in oil, until soft, add in chopped red bell pepper until soft and then coat with flour. Add in beef broth, a jar of Goya Sofrito, can of green chilis, can of Mexican diced tomatoes, frozen corn, chopped fresh cilantro. Add your meatballs after the soup has simmered for a bit and add salt, pepper to taste. To serve, I had Southwest flavored tortilla strips, sour cream, avocado, cheese, more fresh cilantro.
BIRRIA TACOS – This was way to spicy for Roadkill, but oooh so good if you like heat! I used pork butt this time because it was on sale but you can all do this recipe with beef. In a large pot, cook chopped yellow onions in oil until soft, add in chipotle peppers in adobe sauce, minced garlic, fire roasted tomatoes, cumin, ground cloves, cinnamon, paprika, chili powder all spice, salt and pepper and some vinegar and beef broth. For your meat, coat in oil, and rub oregano, paprika onion powder, salt. Put the meat in the crock pot and pout on the sauce. I cooked for 12 hours on keep warm in a crock pot over night. In the morning, shred the meat and remove bones and fat layer. Dip your corn tortilla in the sauce and put lay on a hot oiled skillet or Blackstone Top, put some shredded queso cheese, meat, thinly sliced jalapenos, chopped white onion, fresh cilantro and fold it together to get a nice crunch on both sides of tortilla.
