RECIPES:
LOADED CHEESY CORN BITES – Cook bacon, cut into pieces and set aside on a paper towel. In a bowl, whisk flour, cornmeal, sugar, baking powder and salt.In another bowl whisk egg, cream corn, melted unsalted butter and sour cream and then fold the dry ingredients in until combined well and then add chopped scallions, corn kernels, shredded cheddar and pieces of your bacon. Divide your batter into a greased mini muffin pan and bake 25 minutes at 350 or until cooked through. Top with sour cream, more chopped scallions and chopped bacon.
Football Season:
Steak wrapped French fries – Bake your shoestring fries according to package. Remove from oven and toss in a bowl with olive oil, minced/mashed garlic, rosemary, thyme, salt and pepper. Pound out a flank steak, skirt steak or the already thinly sliced beef for teriyaki they sell. If you are using flank or skirt steak, but into thin slices on an angle. Season with salt and pepper a mixture of Worcestershire mixed with Dijon mustard and cook in a skillet in oil on both sides. Remove steak, put some seasoned fries in the center of the steak and wrap up and seal it up with a cocktail skewer. Drizzle with your favorite steak sauce, I like a béarnaise sauce and then crumble with blue cheese.
