RECIPES:
TURKEY AND ASPARAGUS STIR FRY – Cook chopped shallots in oil until soft, then add minced garlic for a minute and then add in ground turkey, add in chopped asparagus, minced Thai chilies or jalapenos, until a little soft, add in fish sauce, rice vinegar, sesame oil and coconut aminos, add in red pepper flakes or chili paste if you want a little more heat. Add chopped scallions and then serve on top of rice or cauliflower rice.
CAJUN VEGGIE PASTA – I just love veggies and this pasta dish has everything you want!Cook fettuccine or linguini according to package, al dente. In a cast iron pan cook chopped green and red peppers, mushrooms and garlic in butter and then add in Cajun seasoning. Then add in chopped zucchini and more Cajun seasoning and add in vegetable or chicken broth, some heavy cream and cherub tomatoes and mix the sauce until thickened. Taste the sauce to see if there is enough spice or add in more Cajun seasoning and add salt and pepper. Pour the sauce on top of your pasta, then top with fresh chopped scallions and chopped parsley.
