RECIPES:

SCALLION PANCAKE CRISPS – Scallion pancakes are awesome, but a pain to make. This recipe was a great idea and I love these little crisps! Buy dumpling wrappers, I went to Saigon Market on Union St. in Manchester. . . you have to use the dumpling wrappers not wonton wrappers as it’s on the same dough. Anyways, chop a bunch of scallions (I used two bunches), lay a dumpling wrap down, and brush with sesame oil, then sprinkle on some scallions, layer with another wrap and pinch the seams together, then brush more oil, scallions and repeat this process for at least 6 wraps on top of each other and then take a rolling pin and roll our the dough make it flat like a pancake and probably around 6 inches spread out.Then in a frying pan with some oil, cook the pancake on each side until golden. Remove and cut into strips. Serve with a mixture of soy sauce, fresh chopped ginger, Thai chili paste and sugar.

CRAB CAKES – Fresh lump crab meat, and now they sell a can of crab cake mix in the seafood section too. I had some leftover Town House Pita Mediterranean Crackers (this adds a lot of flavor) you could also use panko or crushed saltines, but then make sure you are seasoning the mixture, and I crushed them all up and added to the crab, added in some fresh chopped parsley, chopped jalapeno, some Worcestershire sauce, Dijon mustard and then some egg to combine it all and form patties. On a frying pan with oil, cook for about 4 minutes on each side. I served them with a mixture of sriracha and yum yum sauce.
