IDEAS FOR COOKING –

RATATOUILLE PASTA SALAD – Cook pasta according to directions (al dente) and set aside (I used whole grain penne). Chop zucchini, summer squash, egg plant into cubes, I cooked these on the Blackstone flat top in olive oil, Italian seasonings and Spud Fixin’ (made by camp mix). You could also cook on a skillet. Once soft but not mushy add to your pasta with olive oil, fresh chopped basil, oregano, fresh thyme, fresh chopped parsley and cherub tomatoes, pearl mozzarella balls, salt and pepper to taste.

WEEK 4 OF UNIQUE TACOS:

PHILLY CHEESE STEAK TACOS – Again I use my Blackstone flat top to cook this but you can use a skillet inside. Chop green peppers, sweet vidalia onions, mushrooms (if you like) and cook on the flat top in oil and then add shredded steak, onion powder, garlic powder, salt and pepper and cook all together and then add a couple of spoonful of the jar Cheez Whiz and combine all together. For the shells, heat a pan of oil and put in your flour tortilla until crispy, remove from oil and fold into a taco shell shape and let cool on paper towel to get the oil off of it. Put your cheese steak mix into the shell and you can add in some salsa, tomatoes, etc.
