IDEAS FOR COOKING –

Back to camping! I don’t like cooking the first night of camping, so I prep the day before and just have to throw the foil packs on the grill.

SOUTHWESTERN CHICKEN FOILS – Par cook brown rice and season with cayenne pepper, cumin, salt, pepper, garlic and onion powder and chili powder. Put scoops of rice on tinfoil and then rinse and drain black beans and put some on each rice packet, then pound out some chicken breast and season with taco seasoning. Cut some red and green peppers, red onions, and slice your chicken breast into strips and put on your rice, bean mix and add in peppers, top with salsa (of your choice) drizzle olive oil over dish and add a little water for moisture. Seal your tin foil and throw on your grill for 40 minutes or so. Top with cheese, cilantro, guac, sour cream, lime, chips etc.

WEEK 2 OF UNIQUE TACOS:

ROASTED SAUSAGE TACO WITH CREMA SAUCE – For this unique taco, I cooked up some hot Italian and sweet Italian sausage and cut into small slices and put on a warm flour tortilla, then on top a tomato crema sauce. For this cook diced onions until soft in a pan with olive oil, then add in garlic for a few seconds, a can of diced tomatoes, Italian seasoning, some tomato sauce, some salt, pepper, sugar, crushed red pepper and heavy cream.Then drizzled that on top of sausage, sprinkled with parmesan cheese and fresh basil.
