IDEAS FOR COOKING –
CHILI MEATBALLS –In a bowl mix ground beef, eggs, panko crumbs, chili powder, cayenne pepper, cumin, paprika, onion and garlic powder salt and pepper. Roll into balls and cook in oil in a skillet until brown on each side and then set aside. In the same skillet add chopped onions, chopped green peppers until soft then some garlic until cooked and then add a small can of green chilies, a can of rinsed and drained pinto beans, chili powder, traditional prego, cayenne pepper (depends on how spicy you want it), cumin, salt, and cook down then add your meatballs back into your chili sauce. Top with Mexican shredded cheese and bake at 350 for 20 minutes and garnish with fresh cilantro and serve with tortilla chips.
CRAB AND GNOCCHI CREAMED SPINACH – I love watching Tournament of Champions on the Food Network and the other day someone made a version of creamed spinach with crab, so I just had to come up with something like it. In a skillet add some butter and cook chopped shallots and then garlic, then add in some fresh chopped baby spinach and cook it until wilted then add in heavy cream, salt, pepper and nutmeg, shredded Parmigiano-Reggiano cheese and cook until creamy, then add in a package of refrigerated potato gnocchi, a can of drained lump crab meat and mix and top with panko bread crumbs then bake at 350 for 20 minutes. Add some grated parm cheese and serve with Italian bread or garlic bread.
