Off week of Cooking on a Budget 12/14/22

Well, I won't have Cooking on a Budget tomorrow as we are rehearsing for Buzz Ball, but below you will find the recipes from this week's football food review.

AIR FRIED MASHED POTATOES – I made mashed potatoes: gold potatoes, chopped and boiled until soft, mashed with a half block of cream cheese, some milk, a stick of butter, seasoned with Spud Fixin' (sold by camp mix). Cooked up some bacon and chopped into small pieces, and minced chives and mixed in with the mashed potatoes. Once they are done, they have to be cooled. So make the night before if you have time and put in the fridge. Once they are cold, scoop out a golf ball size of mashed and form into a ball and roll into panko crumbs. Once you have all them rolled out, put on a baking sheet into your air fryer and spray with olive oil spray and air fry for 20 minutes. I served with a beer cheese dip.

BEER CHEESE DIP – Start with butter and flour in your pot and then add in a bottle of Sam Adams and whisk. Then add in a block of pepper jack cheese and sharp cheddar that has been grated and some milk, worcestershire sauce, dijon mustard, salt, pepper, garlic and onion powders and cayenne pepper.

MINI PIZZA BITES - I rolled out some crescent roll dough with a rolling pin to get rid of the cuts. Then I took a shot glass and made little circles that I put in the bottom of the mini muffin pan and then topped with marinara, mozzarella and a pepperoni to top it off. Cooked at 350 for 10 minutes or until golden brown.
