IDEAS FOR COOKING –

SOUTHWEST EGG ROLLS – If you have never made these or tried them, you are missing out! This is a fan favorite at my house! I cook chicken breast seasoned with salt, pepper, onion and garlic powders, shred and set aside. Then cook frozen spinach and frozen corn, when done in a bowl mix spinach (make sure you get all the water out), corn, black beans, chopped red bell pepper, chopped jalapenos, shredded chicken, season with salt, pepper, cayenne pepper, cumin powder and then add in some shredded Mexican cheese. Take an egg roll wrap (in the produce section) and fill and wrap and then deep fry until golden brown. Serve with ranch dressing.

STICKY WINGS – You can deep fry or bake your wings. I baked these as I was frying egg rolls. I lined a roasting pan with aluminum foil and placed paper towel dried wings that are seasoned with salt and pepper and baked for 30 minutes at 350. Removed from oven and drained the juices out. For your sauce: on the stove mix ketchup, rice vinegar, soy sauce, roasted chili pepper paste and honey. Once cooked coat your chicken then put back in the oven and cook for another 15-20 minutes at 400 on until have a carnalized coating and a little crunch. Top with chopped cilantro and scallions.

GARLIC AND HERB CHICKEN WINGS – For a less messy wing I made some dry rub wings too. I mixed cornstarch, flour, salt, pepper, McCormick Grill Mates Roasted Garlic and Herb seasoning. Coat the chicken wings and put on a cookie sheet that is lined with parchment paper sprayed with pam, spray the top of the chicken wings with the pam too and bake 350 and keep flipping to brown on all sides and get that crunch. You can add more pam if they are not crunching up like they should. Add more seasoning at the end if you want more flavor.
