IDEAS FOR COOKING –
HAWAIIAN FRIED SHRIMP
In a bowl mix flour, paprika, cumin, garlic and onion powder and then season your shrimp (deveined and shelled) and season with salt and pepper and then coat with your flour mixture and then fry up in a skillet that has olive oil. They cook quick and you should only need a couple minutes on each side. Once In the same skillet add butter, paprika, minced garlic and then add your shrimp back in and coat, season with more salt and pepper, remove from heat, and then fry up some pieces of chopped pineapple and green onions. Serve the shrimp and pineapples over white rice.
CAPRESE LASAGNA ROLL UPS
I know it’s summer and lasagna is a go to winter dish, but this one is so good in the summer! First cook your lasagna noodles to al dente and set aside. In a skillet, cook chicken breasts that has been cut into small cubes in oil and season with Italian seasoning, salt and pepper until golden brown and then add in some balsamic vinegar and minced garlic and then remove chicken and set aside. . In your skillet add in butter, more minced garlic and once it has cooked about 30 seconds, add in some flour and then slowly add in some milk and whisk as it gets thick and creamy and then add in grated parmesan cheese and shredded mozzarella and then add salt and pepper.In another bowl mix ricotta cheese, egg and salt and pepper. Take a lasagna noodle and spread on your ricotta mixture and then put pieces of slice roma tomatoes, basil, and your chopped chicken and then your cheese sauce and roll up and put in casserole dish that has a layer of cheese sauce on the bottom. Once all your roll ups are done add some shredded mozzarella cheese on top.Bake for about 20-25 minutes and then before you serve drizzle with balsamic glaze.
