IDEAS FOR COOKING –

CRAB RANGOON ROLL UP

I was working on future football Sunday apps and these came out pretty good and way easier than using small wonton wraps. IN a bowl I mixed softened cream cheese, white crab meat, minced scallions, minced garlic, sugar, Worcestershire sauce, a splash of soy sauce and mix. Then take a flour tortilla and spread on your crab mixture and roll up. And then slice into rolls, spray with pam on each side and air fry until golden brown. Serve with duck sauce.

FOIL PACKS

If you camp like me, then you are probably in agreement that the last thing  you want to do on Friday when you arrive and set up is to make a dinner. So the day before we leave I prep foil pack dinners for everyone and then just toss them on the grill when we get there. This weeks camping trip I am doing a chicken, bacon, ranch and potatoes for Jeff. For me I am doing rice, shrimp and asparagus and the kids are getting tortellini and meatballs. Chicken Bacon Ranch Potatoes: Cook your bacon and chop and set aside. Cut baby potatoes into small cubes and season with salt, pepper and olive oil, ranch mix packet and garlic powder. And then cut chicken breasts into cubes and season with more olive oil, ranch mix, garlic powder, salt and pepper. Make sure you use heavy duty aluminum foil and then put a layer of potatoes, top with chicken cubes, sprinkle on cheddar cheese and bacon and then seal up tight. Cook for about 25 minutes. For the Asparagus and Shrimp Rice: In a bowl mix, Worcestershire sauce, soy sauce, brown sugar, lime juice, minced garlic, crushed red pepper flakes and set aside. Place instant rice in some warm water (1 cup of rice for 1 cup of water) and let sit while you prep your aluminum foil. Peel and devein shrimp and chop your asparagus into smaller pieces. Put your rice down on the foil (draining the water) and then top with your shrimp and your asparagus pieces, pour your sauce on top and seal them up. Cook for about 20 minutes. Tortellini and Meatball: I put fresh tortellini, frozen meatballs and your favorite sauce in a foil pack and seal it up. Cook on the grill for 15-20 minutes.
