IDEAS FOR COOKING –
MEXICAN HASH
An easy favorite for me! I use small tri color potatoes and chop them into small pieces, par boil and then fry up in butter with chopped bell peppers (I used red, yellow and orange) and I also love blistering grape tomatoes in too, season all of it with cayenne pepper, paprika, garlic powder, onion powder, salt and pepper. Then set aside. In same skillet I brown turkey burger and put in a can of drained and rinsed black beans, fresh chopped cilantro and corn and season that all with chili powder, cayenne, salt and pepper. Once browned you can add your potato veggie mixture back in and cook into a hash. I topped with guacamole and salsa.
PARMESAN CHICKEN WITH ZUCCHINI CASSEROLE
Casserole might not make you think summer, but these fresh flavors are so good this time of year! Season chicken thighs with olive oil salt and pepper, Italian seasoning and grated parmesan cheese, grill and set aside. In a casserole dish, put zucchini that has been cut into rounds and plum tomatoes sliced into rounds in overlapping rows and drizzle with olive oil, salt and pepper, garlic poser. In a bowl mix wheat bread cut into cubes, grated parmesan cheese, fresh chopped oregano, thyme, salt, red pepper flakes and minced garlic and combine in food processor and then add in some olive oil and black pepper and then later on top of your zucchini and tomatoes and then bake for about 30 minutes or golden brown on 400 degrees. Serve with your grilled chicken.
