**If you don’t want to make an entire Corned Beef Dinner because not everyone likes it then you can get a dinner with corned beef, cabbage, potatoes, carrots and onions for $9.99 each. You can get them hot or cold.**
IDEAS FOR COOKING WEEK –
SPRINGTIME CHICKEN POT PIE
Cook chicken thighs in a skillet and shop up the meat or buy a rotisseries chicken and debone and chop all the meat up and set aside. Cook chopped scallions in some oil and then add in frozen spinach leaves until they start to wilt. Add the chicken to the pan and some chicken stock, some wholegrain mustard, and bring to a simmer for about 10 minutes. Then add in some frozen peas, and crème fraiche (in the dairy isle) and then some fresh chopped tarragon, chopped parsley and stir all together and put in a casserole dish.Take a box of filo pastry dough and scrunch up the sheets and put on top of the mixture and brush with oil and bake for 15-20 minutes at 375 or until golden brown.
BLACK BEAN MEATBALL CHILI
It might be close to spring but it’s still a little chilly so let us warm up with this one. Very easy recipe if you buy frozen or already made meatballs. If you want to make your own, you can do that too! In a casserole dish heat oil and dry your meatballs for 5 minutes or until brown on all sides and then remove those from dish. Add in some thin sliced onion, and thin sliced red, orange and yellow peppers. And season with salt until all soft. Add in fresh chopped cilantro, minced garlic, paprika cumin and cook for another 2 minutes then add in some brown sugar, a couple cans of chopped tomatoes, and 2 cans of rinsed and drained black beans and cook on a simmer for 5-10 minutes on a low heat. Add the meatballs back into the dish and cook covered for 15 minutes on the low/medium heat. Serve with some tortilla chips or some sliced bread. You can also add some cheese on top and more chopped cilantro.
