IDEAS FOR COOKING THIS WEEK – No more football! Back to some normal dinner recipes.

PORCUPINE BALLS

I had never heard of these before but after reading a bunch of different recipes for them. This is what I cam eup with a dn they are good! In a bowl mix instant white rice, ground beef, egg, minced onion, and half can of tomato sauce, salt and pepper. Form this mixture into balls. In a large skillet, put in some oil and brown your meatballs on each side, add in minced garlic, add in the rest of your tomato sauce, some water, Worcestershire sauce, and then let simmer for about 30 minutes or until the meat is cooked through.

CHILE RELLENOS CASSEROLE

In a casserole dish, put a layer of canned whole chile peppers on the bottom and then sprinkle on layers of shredded cheddar and hot pepper jack cheeses and then another layer of chile peppers. In a pan cook down some chopped onions, add in a can of Mexican style diced tomatoes and cook until everything is soft then season with cumin, chili powder and add in some sour cream. Put a layer of this on top of your peppers. In a bowl mix eggs and evaporated milk and some flour and then pour on top of your peppers. Bake for about 20-25 minutes and then pour enchilada sauce on top and then add more cheese and then bake for another 15 minutes or until everything is hot and bubbly. The last thing to make it pop a little more, add some crumbled cotija cheese.
