IDEAS FOR COOKING THIS WEEK –

SPINACH AND SAUSAGE WHITE LASAGNA -

Sometimes I want to mix it up and do a white sauce in my lasagna. Sausage is on sale this week so I will whip up this one. Prep your lasagna noodles according to the package and set aside. Cook your fresh spinach in olive oil and salt for a minute to wilt. Once cooked set aside. In same pan, cook up your italian sausage (you can use both sweet and hot) cut it up into slices and cook in some more oil for about 5 minutes and then add in some white wine and cook for about 10 minutes at a low heat and then add your spinach in to the sausage and set aside. In a pot melt some butter and then add in flour and whisk to get all the lumps out and then add in some milk and continue to mix until it's creamy. Add in some nutmeg and salt. Now to assemble! Start with a little bit of your cream sauce, then add a layer of your lasagna noodles, cream sauce and then your spinach and sausage layer then ricotta cheese, fresh shaved parmesan cheese and then repeat until the top then sprinkle on some shredded mozzarella cheese and bake for 30-40 minutes at 400 degrees and then I broil for the last few minutes to make the cheese golden. Serve with garlic bread!
