IDEAS FOR COOKING THIS WEEK – Back to Cooking on Sundays!
ROASTED RED PEPPER AND TOMATO BISQUE WITH FRIED CHEESE CURDS –In a large soup pot I cooked butter, chopped carrots, chopped celery, chopped shallots, and chopped onions. When they are soft, I added garlic paste and then coated it all with flour to make a roux. Then I added in chopped roasted red bell peppers in a jar and some of the juice, and chopped roasted sweet red peppers from a jar, a large can of whole plum tomatoes, a can of tomato paste and then salt, pepper, fresh thyme, chopped fresh parsley, fresh chopped basil, Italian seasoning, vegetable stock, and heavy cream (I added some crushed red pepper flakes to for a little heat but that is up to you). I let that cook slowly for about 30 minutes or so then used my immersion blender to mix it all to a smooth bisque. At this point if it is not thick enough add corn starch to some vegetable stock and add to your soup to thicken. For my cheese curds: I bought cheddar curds and garlic cheddar curds (Aldi has a bunch of flavored curds) and then I dipped in egg wash and then in a mix of panko and Italian flavored breadcrumbs and fried. I added these on top of the bisque and more fresh chopped basil.
