IDEAS FOR COOKING THIS WEEK – Back to Cooking on Sundays!

WONTON SOUP – For my broth: I used chicken and beef broth and cut big chunks of garlic and ginger and added a cinnamon stick and let that cook for about an hour while I prepared my wontons. You can always buy frozen wontons, but I made them fresh. There is a great Asian market in Manchester where I buy so many great things when I am making Asian food. Anyways I bought round dumpling wraps (I think they are easier to fold up then the square ones.). For my mix: ground pork, minced scallions, garlic paste, fresh grated nutmeg, rice vinegar, sesame oil and mix well to almost a paste and then put in a wrap and seal and set aside. I removed the cinnamon stick, garlic and nutmeg from the broth and added in crushed red pepper flakes, chili paste, Chinese 5 spice, soy sauce and then add in bamboo shoots, chopped Bok choy, sliced jalapenos. Boil water and then add in your wontons and let them cook until pork is cooked through (about 6 minutes) and drain. When you are ready to serve put some dumplings in a bowl and ladle on your broth and then add on some chili oil when you serve.

SHRIMP TOAST – Oh my goodness, I had this once as a part of the dim sum app platter and fell in love! I had to recreate at home, and I am so glad I did. In a food processor put egg whites, raw shelled shrimp, cilantro (but not required if you hate the taste), chopped scallions, soy sauce, lemon grass, salt and garlic powder grind it up to a paste. Cut potato bread slices into triangles and then put spread on your shrimp paste. In a bowl mix some panko breadcrumbs and sesame seeds and dip your shrimp side of bread down in panko and then on your stove heat oil, cook the shrimp side down in the hot oil for 3 minutes or until the shrimp is pink and then quickly fry the bread size for about a 1 minute until golden. Place your toast on paper towel lined plate to drain some grease and then drizzle on your sriracha if you like spice.

VEGETABLE SPRING ROLLS – Boil some water and cook up some bean threads until soft and remove, drain, and chop up. Put in a bowl with a bag of shredded cabbage, carrot mix, chopped scallions, minced jalapenos, soy sauce, Chinese 5 spice seasoning and a sprinkle of sugar. Make sure you get spring roll wraps (again the Asian market has these), egg roll wrappers are to think, and I don’t personally like the rice wraps because you can’t cook those. Put your mixture in the wraps and fry on each side and serve with your choice of sauces! I like Asian chilis sauce, but you can do duck sauce or just soy sauce.

GENERAL TSO MEATBALLS - In a large bowl combine ground chicken with some panko crumbs, thin sliced green onions, an egg, grated fresh ginger, a dash of sesame oil. Roll into meatballs and coat in cornstarch. In a skillet cook your meatballs in oil on all sides and then remove from skillet. Drain your fat and then in the same skillet put in some chicken broth, soy sauce, apple cider vinegar, hoisin sauce, chopped scallions, red pepper flakes and honey. Whisk to combine and then put your meatballs back in the skillet and simmer for up to 10 minutes. Serve meatballs solo or on rice, or rice noodles.
