IDEAS FOR COOKING THIS WEEK – Back to Cooking on Sundays!
POT ROAST PATTY MELTS – I coated a pot roast in a mixture of flour, onion and garlic powder, salt and pepper and then seared in butter on each side. In a crock pot, I put some beef broth, garlic paste, fresh thyme, fresh rosemary, a bay leaf, red wine, a packet of brown gravy, largely chopped onions and chopped carrots and then add in my pot roast.I cooked on warm for 24 hours only because I started it on Saturday and didn’t make the sandwiches until Sunday. You can definitely cook on low heat for a shorter amount of time.When the meat was tender, I pulled it out and took out my bay leaf of the broth.And then added a cornstarch and beef broth to make it thick and then added in my pot roast and shredded all the meat.On the black stone I cooked sliced mushrooms and Vidalia onions until soft, buttered some good panini bread and laid it down on the Blackstone, topped with shredded meat, mushrooms and onions, then a slice of sharp cheddar and a slice of Colby jack cheese and grilled each side until golden brown.I served with the gravy from the pot roast. My brother-in-law likes heat so on his added horseradish and he loved it!Enjoy!
DOUBLE BAKED STUFFED POTATOES AND SWEET POTATOES – Wash all your potatoes, dry and pierce with a fork all over and then coat in a olive oil, salt and pepper and bake at 400 degrees – the sweet potatoes get softer quicker about 40 minutes, but the big baking potatoes took more like an hour and 15min.Just pull them when they are easily poked through.Once cooled a bit, slice in half (the long way) and scoop into bowls (one sweet potato and one regular), I added cream, butter, Spud Fixin’ Seasoning (By Camp Mix http://www.campmix.com/spices/P.html), chopped bacon to each of the bowls and mashed it all up until semi smooth.In the sweet potato mixture I added Smoked Maple Sriracha by the Spicy Shark (https://shop.thespicyshark.com/collections/frontpage/products/smoked-maple-sriracha) and then some more sriracha and maple syrup and the put back into the sweet potato skins and added triple cheddar shredded cheese on top.For the regular potatoes, I added fresh chopped parsley and chives and put back in the skins and added triple cheddar shredded cheese on top.I then baked them again for 20 minutes and served with sour cream.
APPLE FRITTERS - We went apple picking this weekend and the kids love this easy recipe and the love the apple fritters! In a bowl, put some 2 cups flour, 1/2 sugar, 2 ¼ tsp baking powder, 2 tsp. cinnamon and 1 tsp salt.In another bowl, mix 2 eggs, ¾ cup milk, 2 tbsp of melted butter and 2 tsp of vanilla. We use a mix of apples in our fritters, chopped granny smith, Cortland, Macoun and put in your batter . . .. you want your batter to be very thick and lumpy from the apples and just have the apples coated with the batter. Put in some hot oil and flip as soon as you see the bottom of them getting golden.They can burn quick so watch your oil temp and continue to watch. As soon as golden on each side, remove and put on paper towel.Once you have all your fritters done, sprinkle on powdered sugar and cinnamon.
