IDEAS FOR COOKING THIS WEEK –

PIZZA TAQUITOS – I made these for the kids and they were super easy and tasted great too! I made a few different versions. You could easily make a bunch of batches for a football game or just easy apps for when people stop by.I used big burrito size flour tortillas but you could definitely do small ones if you are feeding a bunch of people. Lay your tortillas out one at a time put your sauce down: I did a pesto sauce, did a pizza sauce and one Alfredo sauce.Then add your cheese, Italian seasoning and then your toppings!I cut up a rotisserie chicken and put that on the pesto, I did pepperonis and salami on the pizza sauce and did shrimp on the Alfredo, but mix it up with what you like!Add your layer of shredded cheese: you can use cheddar, mozzarella, and Italian mix. Then roll your tortilla up tight, put on a baking sheet that has a layer of aluminum foil that has been sprayed with nonstick spray. Once all your tortillas are rolled make your sauce. Heat butter and minced garlic and add in some dried parsley, brush this on top of your taquitos, sprinkle on grated parmesan cheese and bake for 10 minutes or until golden brown.

CRISPY BALSAMIC CHICKEN – Marinade your chicken thighs in a mixture of balsamic, olive oil, thyme, rosemary, salt and pepper. In a large skillet put olive oil and cook your chicken thighs (skin side down if you have skin) until crispy and then cook on the others side for 5 minutes, move your chicken to the side. Wipe down skillet, add more oil and in minced garlic, chopped bacon, chopped Brussel sprouts with salt and pepper and cook for about 10 minutes until golden. Add your chicken back to skillet, but in the oven at 425 for 15 minutes. Plate and grate parmesan cheese and drizzle balsamic reduction on top.

SHRIMP AND SAUSAGE CAJUN NOODLES – In a large skillet cook chopped red pepper, green peppers and sliced sausages (I like spicy but you could use sweet) and cook until peppers are soft and sausage browned.Add in your peeled shrimp and cook until pink.Add in minced garlic, salt, pepper and Cajun seasoning.In the skillet add in No Yolks Dumplings (they are the biggest noodles) and then a can of fire roasted tomatoes, a can of chicken broth and some heavy cream. Then mix it all together and simmer for 15 minutes (stirring occasionally) or until the dumplings are cooked through.Top with shredded cheddar and minced scallions.
