IDEAS FOR COOKING THIS WEEK –

I’m not sure how your garden is doing but we have been getting a lot of veggies and even if you don’t have a garden I am sure you have seen all the wonderful fresh and locally grown veggies at your favorite produce section!So this week I will give you some veggie ideas that you can pair up with your favorite grillable.

GREEN BEAN SALAD – Cut your tips off of your green beans and prepare an ice bath and set aside.Boil a couple inches of chicken stock and add your green beans and boil for a few minutes until they are a bright green. (Don’t overcook because you don’t want mushy green beans). Remove your green beans and put in the ice bath.Once they have cooled cut them into smaller pieces and put them in a bowl with halved cherry tomatoes.Some people have the “cilantro tastes like soap” gene, if you do substitute cilantro with basil and parsley.In a food processor mix a minced garlic clove, a bunch of cilantro, lemon juice and olive oil, salt and pepper.Top your beans and tomatoes with the cilantro sauce. (You can also add some fresh cooked corn to it too!)

Summer Eggplant Rolls – Slice your eggplant into long slices (you don’t want them to thin because it will not hold everything and you don’t want it too thick because you need to roll them). In a bowl mix olive oil, minced garlic, finely chopped rosemary and brush the mixture onto the eggplant slices and then season with salt and pepper and grill on each side about 5 minutes each. Once cooked lay our your eggplant and top with a fresh of slice mozzarella, roasted red pepper slices, sprinkle with Italian seasoning, basil leaves and roll up tightly!

Grilled Salmon with avocado salsa – For your avocado salsa: mix your peeled, seeded avocado, small chopped onion, minced jalapenos, chopped cilantro, lime juice, olive oil and salt to taste and then put in the fried.For your salmon: make your rub: salt, pepper, ground coriander, ground cumin, paprika, onion powder and rub your salmon with dry rub and olive oil and then put in the fridge for 30-60 minutes.Grill your salmon to your preferred doneness and then top with your avocado salsa and you can serve on my new favorite rice - Cilantro lime rice from Zatarain.

It’s summer enjoy the grill and fresh veggies! It won’t be long before we are back to casseroles and the oven!
