IDEAS FOR COOKING THIS WEEK –
SUMMER CORN AND CUCUMBER SALAD WITH STEAK TIPS –
You can use can corned, drained, but its summer I prefer cooking up fresh corn and taking it off the ear.In a bowl, mix corn, chopped cucumber, halved cherry tomatoes, chopped shallot, olive oil, soy sauce, lime juice, minced ginger, pepper, chopped fresh cilantro, chopped fresh basil (and chopped mint if you like but I don’t so I never add it). Grill up some steak tips and serve with your salad!
SKILLET BALSAMIC CHICKEN
I absolutely love balsamic and put it on everything from steak to salad. Another favorite in my house are chicken thighs and especially when they are on sale IA take advantage!Season your thighs with salt and pepper and cook on a skillet or your Blackstone griddle in hot oil and once it browns on each side add in minced garlic and chopped mushrooms, add in some balsamic vinegar, chicken, a bay leaf and some dried thyme. Cover and continue to cook for 10 minutes and then uncover and add in a ½ stick of butter and continue to cook for 5 minutes.You can serve over pasta or my favorite to serve with some baby grilled potatoes!
JAMAICAN JERK PORK AND COCONUT LIME RICE
I have been to Jamaica and I love their spicy jerk meats. You will want to marinate your pork butt over night to make it taste the best!You have the option of cooking in the over, but it’s been too hot so I sear on each side and then crock pot it. In a food processor put in sliced habanero peppers, chopped Vidalia onion, chopped scallions, sliced ginger, chopped garlic cloves, allspice, Chinese five spice, pepper, nutmeg, cinnamon, salt, ground cloves, and start to blend and then add in soy sauce, lime juice, some oil, and spiced rum.Reserve a cup or so of the marinade. Cut slits all over your pork butt and then rub your marinade all over pork and make sure it gets into the slits. Cover and refrigerate for overnight or up to a full day and then take out for at least an hour to get to room temperature. Sear the pork on each side in a hot skillet in oil and if you have a meat injector you can put more marinade in the pork butt and then put in your crock pot that has been sprayed with cooking spray. Cook for 8 hours on low and then when done take out any fatty pieces and shred the rest of the meat and serve with your rice! For your rice, rinse your jasmine rice in cold water and drain. In a pot, spray with cooking spray; add rice and then a cup of coconut cream (I found in the Asian section), a bit of sugar and some salt. Bring to a boil and stir until sugar is dissolved. Then put heat to low and cook for 20-30 minutes depending how caramelized you like it. Scrape the bottom of the ban and then add in 2 cups of water and bring back to a boil and cook until water is absorbed and rice is fluffy. Then you can add in more coconut cream and lime juice. Top with fresh cilantro and your Jamaican jerk pork.
CHICKEN TAQUITOS
If you don’t have Aldi you won’t be able to try this delicious sauce and it is so good and adds so much flavor to these!You have some choices for your chicken if you are in a hurry or don’t feel like cooking then buy a rotisserie chicken and shred it. Or you can cook some chicken breasts and shred the meat. In a bowl, mix paprika, cumin, garlic powder, salt and cayenne pepper and then coat your chicken in it. Lay your flour tortilla down and put a layer of the Park Street Deli Mexicali or Street Corn Dip down (if you don’t have the dip I recommend mixing softened cream cheese with some sriracha and chopped jalapenos. It will make your taquitos creamier). Next top with your shredded chicken, some salsa, shredded Mexican cheese and roll up the tortilla into a tight tube and secure with a toothpick and then fry in some oil or air fry. Serve with guacamole, sour cream, more salsa.
