IDEAS FOR COOKING THIS WEEK – I only gave you 4 recipes because I am hoping that you include a corned beef and cabbage dinner next week for St.Patrick's Day! I love corned beef and next week I will give you a couple hash recipes!

COFFEE RUBBED PULL PORK

Mix ground coffee, cayenne pepper, smoked paprika, ground ginger, mustard powder, ground coriander, brown sugar and salt together and then rub all over your pork butt and wrap tightly in wrap and refrigerate over night. In a crock pot put in apple cider and chopped onions and put your pork in and let cook for 8 hours on a low heat. Remove from liquid and shred. You can put back in the liquid and serve with some mashed potatoes and green beans!

INSTANT POT TERIYAKI CHICKEN

My friend just gifted me an instant pot so I am giving it a try. In your pot, put soy sauce, rice vinegar, honey, sesame oil, garlic, ginger, red pepper flakes. Place your chicken thighs in the pot and cook on high pressure for 10 minutes. Let pressure release for 5 minutes and then vent. Shred your chicken and put back in the pot with your veggies (chopped asparagus, chopped peppers, pea pods, broccoli) and simmer for 5 minutes until tender. In a bowl mix some cornstarch and water and add to the sauce, whisk until smooth and thick. Serve over rice.

MOROCCAN EGGPLANT AND CHICKPEA STEW

I love eggplant and usually eat it once a week! Here is a Moroccan dish that you can try. I learned from one of the cooking blogs I read that you should cut your eggplant and put in salted water for about 20 minutes submerged to remove bitterness and prevent the eggplant from soaking up too much oil. Chop your eggplant into big chunks and sear in oil on each side and set aside. In the same dish add in chopped celery, onions, garlic, chopped mini sweet peppers and cook until tender and then add in a can of crushed tomatoes, season with Moroccan seasoning and chopped fresh parley and cook down and add in some raisins and a can of chickpeas, put in your seared eggplant and cover and let cook for 30 minutes or until everything is soft and season with salt and pepper. You can serve with couscous or just eat as a stew.
