IDEAS FOR COOKING THIS WEEK - 

Shrimp and Corn Chowder–I made this for our girls camping weekend last week and have had some people ask for the recipe so hear you go! In a soup pot I cook some chopped red bell peppers in some oil and then some minced garlic. Once softened I add in a container of chicken broth, 2 bags of frozen corn, 1 can of creamed corn, fresh chopped parsley, onion and garlic powder, Italian seasoning, paprika, crushed red pepper(I love the spice in this soup so I use a lot of this), salt and pepper. In a skillet I cook some large shelled raw shrimp in some butter and season the shrimp with paprika and garlic and onion powder. When the shrimp is almost cooked but not all the way so they don’t get mushy add to the soup pot. Then in the shrimp skillet add in some more butter and flour to start your roux. Add in some heavy cream and half and half and get a nice thick gravy conisistency. Add that to your soup pot. Again I don’t measure so I tasting to get where I like it. If it’s not thick enough I just mix some broth with cornstarch to thicken. 

General Tso Meatballs over Rice- Ina large bowl combine ground beef with some panko crumbs, thin sliced green onions, an egg, minced ginger, a dash of sesame oil. Roll into meatballs and coat in cornstarch. In a skillet cook your meatballs in oil on all sides and then remove from skillet. Drain your fat and then in the same skillet put in some chicken broth, soy sauce, apple cider vinegar, hoisin sauce and honey. Whisk to combine and then put your meatballs back in the skillet and simmer for up to 10 minutes. Serve meatballs and sauce over rice or cauliflour rice. Garnish the top with sesame seeds and more chopped green onion. 

Pizza Pot Pie–With this recipe, add in your favorite veggies! This is what I use when I make it. In a skillet, heat oil and cook chopped peppers, marinated artichoke hearts, mushrooms, onions and when soft add sweet Italian sausage, Italian seasonings, pepper and some garlic and cook until browned. Then mix in pizza or marinara sauce and some sliced black olives.Put in either little ramekin dishes or a larger round casserole dish and top the meat mixture with shredded mozzarella cheese.Top the dish with store bought or homemade unbaked pie crust and cut around the dish and seal with a fork,cut an X in the top of it and brush with oil andput some pepperonis on top and bake at 425 for about 40 minutes until golden brown. Sprinkle with some parmesan cheese.  

Easy meal of the weekChicken and Bean Enchiladas–Buy a rotisserie chicken and take all the meat off and shred. Put shredded chicken in a bowl and season with chili powder, cayenne pepper,cumin,paprika, salt and pepper, onion and garlic powder. If you like spicy then I add in minced jalapenos to the chicken. Take your flour tortillas, spread on a layer of refried beans, a layer of softened cream cheese, a layer of chopped green chilies and then stop with your chicken and then some Mexican cheese and roll up and put in a pam sprayed casserole dish, put with seams down and then top with enchilada sauce and more shredded cheese if you like it cheesy! Can garnish with chopped tomatoes, jalapenos and cilantro.
