New Cooking on a Budget - 09-17-20

Well, we had to take a break because back in March a lot of stores couldn't keep up with supply and demand. They also stopped doing flyers and put restrictions on what you could buy, how many of each item. Things got crazy but I will say I am so glad that I always had a full freezer because every time I see a sale I buy and put in my freezer. I was able to go to the grocery store only once in April and once in May. I will say our investment of the stand up freezer was one of the best investments we ever made. If you can get one and have the room in your house, do it!

I have done some things different this time around by not including every ingrediant and where to get it at the cheapest price. It just took way too much time to track every week. I will give you some recipe ideas at the bottom and the best meat, fruit, veggie sales, etc for each store for that week. If you have questions about any of the recipe ideas I give you at the bottom always feel free to email me! Also I recommend signing up for each stores mailer online. I get each flyer by Thursday every week. This helps me plan meals and make my grocery lists for each store.

IDEAS FOR COOKING THIS WEEK - 

It’s fall and that comes with a lot of indoor cooking.  

Mexican Night- With the pork butt on sale I love to put it in the crock pot with green chilies, chopped peppers, cilantro, paprika, cayenne pepper, minced garlic, chopped onions, chili powder, salt, pepper and let it cook for 8 hours on low. I tear ita partand then do amexicannight. The kids love quesadillas and I love it on top of taco salads or in carnitas. Just a few ideas! (You could also put chicken in the crock pot the same way, shred it and turn into amexicannight.)

Steak night- Love when Rib eye steak on sale! $8.99lb is still a pricey steak but it’s a great cut. You could use this recipe and do any of the other roasts on sale this week too. Season it with salt and pepper, onion powder, garlic powder, paprika, oregano, cumin and brown sugar. Get the steak or roast to room temp and rub it down with your seasoning mix. I cook it at 500 for 15-20 minutes and then turn the oven down to 250 and just let it cook in the low heat. (it’s about 25 minutes per pound). Let your roast rest for 30 minutes with a loose tin foil cover. 

Chicken night- Whole Roasted Chicken – Pat your chicken dry. In a bowl, mix some melted butter, white wine, lemon juice and olive oil and spread it over the outside of chicken and inside of chicken. Then on the outside season with salt, pepper and parsley then rub inside and outside with minced garlic. Inside your chicken put rosemary and thyme sprigs and your leftover squeezed lemon to intensify the lemon taste. Set your oven to 400. (A 4lbchicken takes a little longer than an hour.) Baste halfway through. When your chicken temp is right, baste and broil for acruncyskin. Let the chicken rest and then serve it up! With the leftovers I love making homemade chicken salad! 

Leftover night– If you have any leftovers from your chicken chop up and make a homemade chicken salad.Mayonaise,dijonmustard, squeezed lemon juice, celery if you like crunch and fresh chopped parsley, salt and pepper to taste. Mix it up and put it on a toasted roll!  

Easy meal of the week– Ranatortellinis/ravioli night! Love this because everyone likes a different variety. Serve with a side salad so you get all your veggies!
