Stuffed Eggplant

I gutted the inside of the eggplant and cooked the shells of the eggplant in a casserole dish with bit of water at 350 for maybe 20 min. I chopped the eggplant “guts” cooked with Garlic in olive oil, three chopped Roma tomatoes, chopped basil, grated parm cheese, a scoop of ricotta, onion powder and a little pasta sauce. In a separate pan cooked chicken breast chopped fine and then added to eggplant mix and then put in the eggplant shells and topped with shredded Italian cheese and baked for another 20. Served with pasta and garlic bread for the boys but low carbed it for me so just the eggplant but soooo good!
