GAME DAY RECIPES

ULTIMATE CHICKEN PARM SLIDERS – Pound out your chicken and cut into small pieces that will fit on your Hawaiian slider rolls.Make an egg wash in one bowl, one bowl mix some flour, grated parm cheese, onion and garlic powder, in another bowl I have Italian seasoned bread crumbs that I mix with some cornstarch.Dip your chicken in the flour mix, egg wash and then bread crumbs and then fry each side crispy in olive oil.Remove from oil and put in baking dish that has a layer of sauce on the bottom, then spread on a layer of ricotta cheese, Italian seasoning, a slice of roma tomato, a spoon of more sauce then top with a slice of the fresh mozzarella.Repeat for all pieces of chicken and bake until chicken is cooked through then I broil to make the cheese bubbly and golden. Put on your slider rolls and serve up to the crowd!

SPICY CHEESE DIP – Brown some ground beef seasoned with paprika, chili powder, cayenne pepper, salt, pepper, cumin, garlic, onion powder and then put in a crock pot.Brown some hot Italian sausage (not links unless your remove the casing) and add that to your crock pot.Then cut the block of cheese melt into cubes and add to your crock pot and then add in some salsa (I like hot but you could do mild if you don’t like to much spice).Serve up with your tortilla chips.

SESAME SHRIMP PUFFS – Finely chop up shrimp, and scallions, in a bowl mix an egg, some minced garlic, oyster sauce, sesame oil and honey and then add in your shrimp and scallions.Put in the fridge for at least an hour before you use.Preheat oven to 400, roll out pastry puff and let get to room temp and cut into squares.Put a spoonful of your filling on your square and then moisten the edges with water and fold into a triangle and seal the edges with a fork and then coat your puffs with a beaten egg sprinkle with sesame seeds and bake for 15 minutes or until golden brown.Serve with a sweet chili sauce: in a pan cook some white wine vinegar, fish sauce, minced red chili pepper, minced garlic, peeled and grated ginger, red chili flakes, sugar and the dilute some corn starch in some water and add to the pan to thicken your sauce.Serve your puffs with the sauce.

WINGS – So many recipes for chicken wings out there and with the game coming up and all the sales why not join in the crowd.I love all wings, but my favorite has to be a maple and orange flavored wing.Heat your oven to 400.In two bowls mix some fresh squeezed orange juice, orange zest, minced garlic, soy sauce, brown sugar, maple syrup, salt and pepper. Coat your chicken wings with the sauce and arrange on a baking sheet and bake for 20 minutes and then flip and brush with more sauce and continue to cook.When your chicken is done I coat with the extra bowl of sauce and serve.(You can also add red pepper flakes to make spicy and sweet chicken wing.)

PORK CARNITA BAR– Salt and pepper your pork butt and in an oil skillet, sear each side of your pork butt (you can cut into smaller chunks).Once all seared put in a crock pot with minced garlic, chopped sweet onion, chopped peppers, an orange cut in half and put on top, taco seasoning, garlic powder, onion powder, chopped chipotle peppers in adobo sauce, some milk and a ½ beer (I used Sierra Nevada for this).Cook for 8 hours on low heat and then shred your meat and let people serve themselves!Put out sliced avocado, cilantro, watermelon radish, limes, cheese, corn and flour tortillas, jalapenos, shredded cheese, charred corn, black beans, salsa verde, pico de gallo, chopped pineapples.Enjoy!
