RECIPES FOR THE WEEK

SPICY SHRIMP EGG ROLLS –Egg rolls are great for when you are having a bunch of people over.You can air fry, deep fry or bake!I always love the unhealthy taste of my fry daddy, but cook how you want.For the filling this time I am doing shrimp, but you can change it up and do whatever you want!I take my shrimp (peeled and deveined) and coat it in cornstarch, mixed with paprika, chili powder, onion and garlic powder and salt and pepper and fry them up and set aside.In a bowl, mix some mayonnaise, sriracha, rice vinegar and sugar.I like spice so I put a lot of the sriracha but make to your taste.Take your egg roll wrappers put in some of the 3 color cabbage mix, ½ slice of pepper jack cheese, your shrimp, and your sauce, then roll your egg roll and cook how you want (Bake/Fry/etc.).Serve with more of the sauce.

TOMATO-EGGPLANT TARTINES – Heat your stove top grill for a few minutes and toast sliced Italian bread on each side, remove and then drizzle with olive oil and rub some garlic clove on it.Slice your eggplant thin and toss in mixture of olive oil, salt, onion and garlic powder and throw on the grill and cook for 5 minutes, then flip to grill the other side and top with fresh sliced mozzarella, grill for 5 more minutes.Top your garlic bread with sliced plum tomatoes, salt and pepper, fresh chopped basil and then top with your grilled eggplant.I put it under the broiler at this point to make the cheese golden and bubbly and then sprinkle with parmesan cheese.

MUSHROOM AND BROCOLI CASSEROLE– Melt butter in a large pot and add some flour to make your roux.Steam your broccoli until tender but still firm. Cook some rice (I like brown rice). In the pot add in sliced mushrooms (I grab whatever is on sale), chopped onions, minced garlic, onion and garlic powder, cayenne pepper, heavy cream, chicken stock and your chopped broccoli, some shredded cheddar/Monterey jack cheese blend, and your rice. Mix all together and season with salt and pepper to taste.Pour all this in a buttered casserole dish and then top with more shredded cheese and cook for about 20 minutes or until hot and bubble at 425. Serve as a side with some baked chicken or just eat as your meal and serve with a roll!

GAME DAY BEER BRATWURST –You don’t’ have to just make this for Super Bowl Sunday but it is football week so why not!Plus this one is easy and a crock pot recipe so set it and forget it! Slice onions into rings and put in our crock pot, soy sauce and brown sugar and then put your bratwurst on top of the onions.In a bowl, mix some beer (I used sierra Nevada) Dijon mustard, caraway seeds and pour this mixture on top of your brats and cook in the crock pot for 8 hours on low.Pull the bratwursts out, and then mix sauerkraut into the onion beer mixture in crock pot and let warm together for a few minutes and once heated, strain the sauerkraut- onion mixture and serve on hoagie rolls with more Dijon mustard.

SKILLET N.Y. SIRLOIN WITH CREAMY SCALLOPED POTATOES – You can use Sirloin Steak or T-bone steak (both on sale at different stores this week). Pat your steak dry and bring to room temperature and then rub with olive oil, salt and pepper. In a very hot skillet put some more oil and then your steaks, sear on each side for a minute and then sear the edges (especially if they are fatty). Continue to cook each side, flipping often and then add in some butter, minced garlic and fresh thyme and rosemary.Keep spooning the butter sauce on top of steak as it cooks. Once your steak is done (Medium rare shouldn’t be over 6 min or so) let your steak rest for 5 minutes before slicing. For your potatoes, in a pot mix butter, minced garlic, mix in some flour to make your roux, then salt, pepper, milk, and some grated parmesan cheese, in a baking dish put in thinly sliced potatoes (yellow potatoes), standing up to look like an accordion, and then pour on top your cheese sauce.Bake for an hour at 350.
