RECIPES FOR THE WEEK

SPICY BANH MI SANDWICHES – Super easy and great late lunch/early dinner for the Pats 4:30pm game! Buy a couple rotisserie chickens (depending how many people you have coming over) and take all the meat off the bones.In a bowl, mix minced scallions, minced garlic, minced jalapenos, lime juice, soy sauce, brown sugar, allspice and some vegetable oil and coat your chicken in the sauce (if your chicken is cold, heat up your chicken in a skillet with the sauce to coat your chicken).Toast your sandwich rolls (I like a crusty bread for these but whatever you prefer). Spread on some mayo, top with your chicken, thinly sliced cumber, shredded carrots, and cilantro and drizzle some sriracha on top if you like added spice.

THAI COCONUT CHICKEN THIGHS WITH PINEAPPLE SALSA – Season your chicken thighs with salt and pepper and cook in a skillet with some oil.When it starts to brown on each side, add in some minced garlic, minced fresh ginger, some fish sauce, coconut milk and chopped pineapple and start to boil and then reduce to low and simmer until chicken is completely cooked through.While that is cooking combine more chopped pineapple, chopped scallions and chopped Thai Chile for your salsa and cook up some rice (I like brown rice but pic what you like).. In a dish serve up your chicken, ladle in your sauce and top with your rice and salsa. And I toast some coconut and sprinkle on top for a little more flavor and crunch

PULLED PORK POSOLE SOUP – Easy because the pork will cook all day while you’re at work!Rub your pork with a mixture of salt, pepper, cumin, cayenne pepper, paprika, garlic powder and then put in your crock pot with sliced red onions and cook for 6 hours or until easy to shred.In a large pot, heat oil and cook down chopped red onions, then add in minced garlic, chopped roma tomatoes (I like tomatoes and put 3 or so in) and cook down until soft.Add in 6 cups of chicken broth, 2 cans pinto beans (undrained), 2 cans drained hominy (or corn if you prefer), 2 cans pureed tomatoes, seasoned oregano, cumin, hot sauce, salt and pepper.Add in the shredded pork and juices and let cook for about 30 minutes.Top with chopped cilantro, lime wedge, shredded Mexican cheese, and tortilla chips.

STEAK TIPS WITH BUTTER PARMESAN TUSCAN MUSHROOMS – Let’s take a break from all the Poultry!Grill up your steak tips (indoor or out) I marinade in whatever I have in the house (how about Italian dressing, worcestshire sauce, garlic and onion powder, salt and pepper).In a cast iron pan put in butter and garlic and let brown slightly and add mushrooms (I used chopped and whole, baby bellas) Cook until golden brown and then add in sun dried tomatoes and cook for a couple of minutes to make soft.Add in beef stock, more butter and cook for another 5 minutes or so to reduce sauce.When sauce is thick remove from heat and top with chopped fresh parsley and fresh grated parmesan cheese.

MEXICAN STUFFED PEPPERS – Brown up your ground beef (or turkey if you choose) seasoned with salt, pepper, onion and garlic powder.Drain fat and add in taco seasoning packet (or I make my own with paprika, chili powder, cumin, cayenne, onion and garlic powder) and then add in some water, cooked rice (I like using Rice a Roni Cilantro Lime rice but use whatever you like), salt, pepper, 1 can of tomato sauce and mix, bring to a boil then reduce heat to low and simmer for 15 minutes.For your peppers, cut the tops off and scoop out the seeds and core.Steam the peppers for about 3 minutes or until tender but not soft.Fill the peppers with your meat mix and stick a cube of pepper jack cheese in the center of the meat mixture in the pepper, top with some more tomato sauce and put in a baking dish, cover with tinfoil and bake at 350 for about 30 minutes . . . top with shredded Mexican cheese and put under broiler for a minute until cheese is browned!Serve with a side or tortilla chips, salsa and sour cream.
