RECIPES FOR THE WEEK

FILLED BISCUITS – A lot of people come over for football Sunday’s so I will do varieties of this recipe so everyone is pleased. It’s super easy and quick!I will make ham, chicken and shrimp biscuits, but you could do steak and cheese, Italian or whatever you are in the mood for. Preheat oven to 350and coat a muffin tin with cooking spray. Use refrigerated biscuits and split each one in half and place in muffin cup.Press onto the bottom and up the sides.In a bowl mix shredded Monterey jack cheese, with your protein (cooked, peeled and diced shrimp or cooked chopped chicken or ham) and fresh chopped dill, minced scallions, and some mayonnaise.Put the mixture on top of each biscuit and bake for 20 minutes or until the puffs are golden and bubbling.

SLOW COOKED BONE-IN STRIP STEAK WITH SWEET POTATO SALAD – I know this recipe takes a while but it’s a great way to get a tender steak.Your meat should be frozen (if it’s not frozen – put in the freezer for at least 30 minutes before cooking).Preheat your oven to 175.Rub vegetable oil, salt and pepper on each side of your steak.In your cast iron skillet heat to a high heat and sear each side of your steak (about 1 minute on each side) and then sear the fat around the edges.Place steak on a baking sheet and cook for about an hour or until the steak is the way you like (this is for med-rare). In a small pot combine butter and rosemary and cook for 5 minutes. Brush the steaks with this mixture and salt the steak and let rest. Sweet potato salad: Peel, cube and cook your sweet potatoes in boiling salted water.Drain and cool our potatoes once tender and set aside. Cook up some bacon and crumble.In a bowl combine your sweet potatoes, bacon, pecan pieces, and crumbled blue cheese.In a small bowl, whisk together balsamic vinegar, olive oil and chopped fresh thyme, pour over your potatoes and toss to coat.

BAKED RANCH CHICKEN THIGHS WITH PARM BROCCOLI CROWNS – Preheat your oven to 400.Cover a baking sheet with foil and spray with pam.Season your chicken with salt and pepper and bake for 25 minutes.In a bowl combine a packet of ranch dressing dry mix, olive oil and minced garlic. Brush your ranch mixture over your chicken and continue to cook until skin is crispy and golden brown.(If your chicken is cooked through and you want to crisp up the skin even more, just put on the broiler for a few minutes.) Parm Broccoli Crowns: Steam your broccoli until bright green and still crisp.In a skillet, put olive oil and minced garlic and when your garlic gets soft turn off the heat, add in your steamed broccoli, some lemon juice and then top with salt, pepper and some grated parmesan.

CREAMY MEATBALL SOUP – For your meatballs mix ground pork and ground Italian sausage (I used spicy but you can use sweet too), minced onion, minced garlic, minced celery and an egg and mix together, form your meatballs and chill in the fridge while you prep everything else for the soup.Cut onions; mince garlic, cut carrots and mushrooms.Once your meatballs are set, in your pan brown your meatballs on each side in some oil and set aside.In the same pan, cook your veggies in some oil until soft.In a large pot, put in beef stock, Italian herb seasonings, your veggies and meatballs, and cook on high heat to reduce the stock to about half.Turn off the heat and slowly add in heavy cream (about 2 cups) and whisk as you add it. Then add in a cup of grated parmesan cheese and continue to whisk until creamy and put the heat back on and the soup will start to thicken.

CHICKEN PICCATA WITH LEMON SAUCE – Pound out your chicken thin.In a dish, mix in 2 eggs,a splash of white wine, lemon juice, minced garlic and some hot pepper sauce (I used sriracha). In a bowl, mix ½ cup flour, ½ cup grated parm cheese, minced fresh parsley, and salt.Coat your chicken in the flour mixture, the egg mixture, the flour mixture again and then cook in your skillet in some oil until cooked and set aside.Once all the chicken is done, in the same skillet add in butter, some more white wine, lemon juice and bring to a boil and reduced.Drizzle over you chicken.Serve with a slice of lemon, some rice pilaf and asparagus (pour some of the extra sauce on the asparagus)!!
