RECIPES FOR THE WEEK

BUFFALO CHICKEN WONTON WRAPS – I always have wonton and egg roll wraps handy because they have a long shelf life and you can always make a great quick app with them! Anyways . . . serve these up for game day or make a different filling for your wonton wraps.Preheat oven 350 and spray a muffin pan with cook spray and put your wonton wraps in each cup of the tray and bake for 7 minutes or so or until lightly brown.Take out and cool while you make your filling. Cook your chicken breast and shred the meat.In a bowl, mix soft cream cheese, Greek yogurt, buffalo sauce, garlic powder. Stir in diced green onions, shredded cheddar cheese and shredded chicken and stir until all combined and put in your wonton cups.Sprinkle crumbled blue cheese on the top and bake for about 10 more minutes.Top with more diced scallions and buffalo sauce.

PORK CARNITAS – Not sure if I have done this one before, but they are good and pork butt is on sale. I rub the pork with a mix of chili powder, cayenne pepper, cumin, garlic and onion powders, salt and pepper.Then up in a crock pot with diced onions, minced garlic, and a can of green chilies, some lime juice and orange juice.Cook for 10 hours on low or until the meat falls apart and shred.For your carnitas, put a flour/corn tortillas on a frying pan that has been oiled, heat one side, flipand then top with some pulled pork, pico de gallo and some shredded Mexican cheese and freshly chopped cilantro, fold each end of the tortilla up and press the top shut with your spatula to seal.You can serve with limes, avocados and Mexican rice.

CHICKEN AND VEGGIE SKILLET – In a skillet, toast some pecans and then chop and set aside. Cook chopped bacon in a skillet, remove and set aside.Pat down some chicken thighs and season with salt and pepper and sear your chicken thighs in your bacon fat on each side. Don’t have to cook all the way through because you will be baking at the end. Drain most of the fat out of the pan, but leave some fat in and add in sliced veggies. (I like onions, Brussel sprouts, zucchini, mushrooms, asparagus, but use whatever you like). Once they start getting soft, add in some minced garlic, salt, pepper and then add in some white wine to deglaze the pan, and scrape up the bits on the bottom.Add in some chicken broth and then top with your chicken thighs and put in the oven for about 15 minutes or until chicken is cooked through.Sprinkle with your chopped bacon and pecans, lemon zest and serve.

TUNA CASSEROLE – Comfort food at its finest!Cook egg noodles (al dente) and set aside. In a skillet, melt butter and add in diced celery, diced red bell pepper and diced onion.Cook until soft and add in some flour, salt and pepper and whisk in some milk slowly as it gets thick and bubbly, add in a couple of spoons of Dijon mustard and some mayonnaise.Mix in white chunk tuna (drained) a cup of frozen peas, noodles, cheddar cheese and mix all together in sauce.Pour into a big casserole dish. In a bowl combine panko crumbs, grated parmesan cheese, paprika, chopped parsley and melted butter and then sprinkle over the top and bake for 30 minutes at 375 (or until golden brown).

APPLE PORK SIRLOIN ROAST WITH ROASTED PARSNIPS AND CARROTS – Preheat oven to 350. Pat your pork dry and coat with salt, cover with saran wrap and let sit out for at least 30 min to bring to room temperature.Once at room temp, unwrap and add more salt to coat it to give a crispy outer layer.In a bowl, mix olive oil, minced garlic, salt, pepper, paprika, brown sugar and put in your baking dish and then lay your pork on top, also you can add some cut apple pieces around your pork for more flavor and bake for 45 minutes and then turn off your oven and let sit in there for about 30 more minutes.You want to check your temp to make sure the pork doesn’t dry out. . . .It all depends on your pork size. It should be 160 inside.For your roasted veggies: Peel your carrots and parsnipsand cut them into strips and toss in olive oil, salt pepper and cook on a cookie sheets at the same time as your pork.Flip occasionally and should take out when tender.I like to put the apple gravy drippings from the pork on top of the veggies too.
