RECIPES FOR THE WEEK

FRENCH DIP PINWHEELS (PATS GAME TREAT) – Just loving these 1pm games!Tons of food, friends, family and footballs!Preheat your oven to 350 and spray your cookie sheet.IN a skillet, melt butter, thinly sliced onion (I do red onion and yellow onions), thyme sprigs and cook until soft.Season with salt and pepper.ON a floured surface, unroll crescent dough and separate into two rectangles.Pinch together the seams (roll if you have to with rolling pin).Top each rectangle with provolone cheese, roast beef and your caramelized onions.From the short side of your rectangle roll up your pastry.Pinch edges to seal and then cut your roll into 4 slices and put cut side up on your baking dish.Sprinkle with chopped fresh thyme and bake for 30 minutes or until your dough is cooked and golden.For your au jus dipping sauce: In a sauce pan, melt butter and minced garlic until soft and add in beef broth, worcestershire, salt and pepper.I like a thicker sauce so I will mix some beef broth with corn starch and mix into sauce until thickness I like.

MAPLE-GLAZED TURKEY MEATLOAF W/BACON AND BUTTERNUT SQUASH – Preheat oven to 375 and line a baking sheet with parchment paper.In your skillet, heat olive oil, chopped bacon, chopped onion, minced garlic and chopped cubes of butternut squash, season with salt, pepper and thyme.Cook until your squash is soft and set aside to cool.In a large bowl, mix ground turkey, panko bread crumbs, grated parmesan cheese, chopped parsley, and an egg.Mix all together and fold in your butternut and bacon mixture until smooth. Season with more salt and pepper and transfer to your baking sheet.Press into the shape of a football and then sprinkle some of your favorite seasoning on top – I like the Montreal chicken seasoning.In a small bowl, mix a couple tablespoons of tomato paste, maple syrup, apple cider vinegar and Dijon mustard and olive oil (separate in 2 bowls) and brush on to the your meatloaf and cook for 35 minutes.Let rest and brush on the rest of your maple-tomato sauce and serve!

PULLED PORK MAC AND CHEESE – Comfort food, oh, yes!!Take your pork butt and trim off excess fat.For your rub, mix onion powder, paprika, coriander, garlic powder, salt and pepper and generously rub your pork.(You can wrap and leave in your fridge for a day to really let the seasonings set in or you can just leave pork out at room temp for about 30-40 minutes to get it up to temp.Sear each side of your pork in an oiled skilled and then put in your crock pot.Also in your crock pot add: minced garlic, diced onions, chopped jalapeno, salt, pepper, thyme.Add in your favorite beer (I used a can of Guinness) and your favorite BBQ sauce (or make your own).(BBQ sauce I make: ketchup, apple cider vinegar, brown sugar, honey, Worcestershire sauce, paprika, dry mustard, garlic and onion powder, salt and pepper and sriracha).Let your pork cook for 6-8 hours on low.You will know when it’s done with the meat falls apart.When this happens take out of sauce and shred, set aside.Cook your pasta (I like Cavatappi) according to package and set aside.In a sauce pan, combine some of the liquid sauce/beer mixture from your crock pot (use a strainer to avoid adding in the fat that may have fallen off your pork), also some half and half, and milk.Whisk and heat until warm.In a pan, melt some butter and add in flour to make your roux.Add in your hot milk mixture with the flour (add a little at a time and whisk as you go to get lumps out).Continue to cook and taste to figure out if you need more flavors (this is when you can season with more garlic/onion powder, salt, pepper, etc.).Now to add the cheese, add in some grated cheddar, Colby jack, pepper jack (I often go to Market basket deli and get the cheese ends – cheap and the cheeses change all the time).Once cheese is melted into your milk mixture pour the cheese on to your macaroni and mix add in your pulled pork.In a casserole dish, put your pulled pork mac and cheese, top with some panko bread crumbs and more shredded cheddar cheese and bake until there is a nice cheese crust.

STEAK AND MUSHROOMS WITH GARLIC SPINACH – In a skillet, put oil and wait until it’s really hot (almost smoking). Season your steak with salt and pepper and onion powder and sear both sides (only need about 3 minutes on each side if you like it medium rare).Let steak rest on a plate.Take your pan off the heat and pour in some red wine to deglaze and start scraping up the steak bits from the skillet.Add in some butter, salt, pepper until melted and pour into a bowl.Put the pan back on medium heat and add mushrooms (mix it up some baby belle, cremini, oyster, shitake) and cook until soft and brown, pout on top of steak.In the same pan, add some oil, minced garlic and baby spinach. Cook until spinach is wilted.Serve with your steak and mushrooms. (I sprinkle fresh grated parm cheese on top!)

CHICKEN FAJITAS – It’s easy and healthy! Slice your chicken breasts halves. In a large bowl, mix oil, lime juice, orange juice, soy sauce, Dijon mustard, chili powder, brown sugar, garlic and onion powder, cumin, salt, pepper and red pepper flakes and let your chicken marinate in this mixture for an hour so.When you are ready to cook, heat some oil in a skillet and cook chicken through and set aside to rest.In the same skillet, add in a little more marinade and cook up your sliced peppers, onions, and in some chopped pineapples at the end.If you like spice, add some more cayenne pepper. Now that your chicken is rested, slice into strips. Assemble your fajitas on your flour or wheat tortillas that have been warmed in microwave or oven.Serve with, shredded cheese, Pico de Gallo, tomatoes, avocados, sour cream, chopped cilantro, hot sauce, lime wedges mmmm!
